Quelle que soit votre position sur le spectre carnivore-v\u00e9g\u00e9talien, une chose est s\u00fbre : le v\u00e9g\u00e9tal est l&rsquo;option la plus durable pour notre plan\u00e8te, une question sociale et environnementale qui n&rsquo;est pas une mode \u00e9ph\u00e9m\u00e8re. D&rsquo;autres choisissent ce mode de vie en raison des avantages qu&rsquo;il pr\u00e9sente pour la sant\u00e9. C&rsquo;est pourquoi nous voyons de nombreux amateurs de viande fournir un effort conscient pour introduire davantage de prot\u00e9ines v\u00e9g\u00e9tales dans leur alimentation.<\/p>\n<p>Nous nous sommes rendus \u00e0 l\u2019expo Plant Based World de Londres pour \u00e9valuer nous-m\u00eames cette cat\u00e9gorie.<\/p>\n<p>Cette visite a constitu\u00e9 un voyage \u00e9clairant dans l&rsquo;\u00e9tat actuel et l&rsquo;avenir du monde v\u00e9g\u00e9tal. Deux cents exposants d&rsquo;Europe, des \u00c9tats-Unis et d&rsquo;Asie se sont r\u00e9unis pour c\u00e9l\u00e9brer les progr\u00e8s et les d\u00e9veloppements de cette cat\u00e9gorie de produits en pleine \u00e9mergence.<\/p>\n<p>Voici les principales conclusions que nous avons tir\u00e9es de cette exposition :<\/p>\n<p><strong> Les solutions de rechange v\u00e9g\u00e9tales \u00e0 la viande, au poisson, au poulet et aux prot\u00e9ines laiti\u00e8res sont l\u00e0 pour rester.<\/strong><\/p>\n<p>Quelque peu enhardis par la repr\u00e9sentation m\u00e9diatique de la disparition des substituts de viande d&rsquo;origine v\u00e9g\u00e9tale, des dizaines de fabricants sont venus sur le devant de la sc\u00e8ne, y compris notre client Omni Foods, avec l&rsquo;engagement de tirer les le\u00e7ons de l&rsquo;exp\u00e9rience de Beyond Meat et de fournir au consommateur des produits et des marques de substitution d&rsquo;origine v\u00e9g\u00e9tale meilleurs et plus cr\u00e9atifs. Lors de la r\u00e9cente Plant Based World Expo \u00e0 Londres, en Angleterre, le consensus \u00e9tait que Beyond Meat a \u00e9t\u00e9 construit comme un jeu d&rsquo;actions avec un produit rempli d&rsquo;ingr\u00e9dients \u00ab\u00a0chimiques\u00a0\u00bb qui ne r\u00e9pondait pas aux attentes gustatives des consommateurs. Les innovateurs en mati\u00e8re de produits, tels que Planted, Wicked, Unconventional et Schicken, ont mis au point des ingr\u00e9dients au go\u00fbt remarquable et relativement sains, offrant aux consommateurs des options de rechange aux prot\u00e9ines d&rsquo;origine v\u00e9g\u00e9tale. En tant que cat\u00e9gorie \u00e9mergente, les produits prot\u00e9iques d&rsquo;origine v\u00e9g\u00e9tale sont en concurrence avec ceux \u00e0 ingr\u00e9dient unique : b\u0153uf, poulet et poisson. Imiter le go\u00fbt et la texture de ces aliments traditionnels n&rsquo;est pas une mince affaire. Les premi\u00e8res marques sur le march\u00e9 y sont parvenues avec un certain succ\u00e8s, mais au prix de la cr\u00e9ation d&rsquo;une liste d&rsquo;ingr\u00e9dients \u00e9tendue et assez malsaine. Ces longues listes d&rsquo;ingr\u00e9dients, qu&rsquo;il fallait presque avoir un dipl\u00f4me en sciences pour comprendre, sapaient l&rsquo;une des principales raisons pour lesquelles les consommateurs se tournent vers les options \u00e0 base de plantes&#8230; les avantages pour la sant\u00e9. Un grand nombre de produits nouveaux et am\u00e9lior\u00e9s pr\u00e9sent\u00e9s \u00e0 la Plant Based Expo ne contenaient que quatre ingr\u00e9dients pour simuler l&rsquo;original et ont remport\u00e9 un grand succ\u00e8s. Les nouvelles entr\u00e9es et les efforts de d\u00e9veloppement de produits r\u00e9vis\u00e9s font entrer des dizaines de marques dans cette cat\u00e9gorie d\u00e9j\u00e0 encombr\u00e9e, qui rivalisent avec leur source de prot\u00e9ines d&rsquo;origine. Elles ont reproduit les profils de go\u00fbt et de saveur des sources classiques de prot\u00e9ines, mais en utilisant d\u00e9sormais des produits d&rsquo;origine v\u00e9g\u00e9tale comme produit de base. Pour le mouvement v\u00e9g\u00e9tal, la transparence est le nerf de la guerre. Une communication honn\u00eate et franche est essentielle. \u00c0 ce sujet, la soci\u00e9t\u00e9 Swiss Based Planted a r\u00e9cemment achev\u00e9 la construction de son usine \u00e0 Kemptthal, en Suisse. Les murs du b\u00e2timent sont enti\u00e8rement en verre, ce qui permet aux passants d&rsquo;observer ce qui se passe \u00e0 l&rsquo;int\u00e9rieur. Les produits v\u00e9g\u00e9taux comme Wicked et Schicken ont d\u00e9velopp\u00e9 des syst\u00e8mes de conception solides qui rivalisent avec ceux des grandes marques de produits de consommation courante. La plupart des autres acteurs de la cat\u00e9gorie n&rsquo;ont pas la sophistication de l&rsquo;image de marque et du design n\u00e9cessaire pour \u00eatre comp\u00e9titifs dans un environnement de vente au d\u00e9tail complexe et encombr\u00e9. La \u00ab\u00a0confusion\u00a0\u00bb est l&rsquo;une des \u00e9preuves d\u00e9cisives utilis\u00e9es par les organismes de r\u00e9glementation pour accepter les enregistrements de marques et les descripteurs de produits. Certains fabricants fr\u00f4lent dangereusement les limites de la loi en imitant et m\u00eame en empruntant l\u2019apparence de la source de prot\u00e9ines d&rsquo;origine. Pour prot\u00e9ger leurs industries laiti\u00e8re, carn\u00e9e et piscicole, d&rsquo;innombrables pays comme l&rsquo;Allemagne et la France prennent rapidement des mesures pour interdire l&rsquo;utilisation de termes tels que <em>lait<\/em>, <em>fromage<\/em> ou <em>hamburger<\/em> dans les descriptifs des substituts v\u00e9g\u00e9taux. Par exemple, la boisson Swish du Royaume-Uni est une d\u00e9licieuse boisson effervescente cr\u00e9ative \u00e0 base de plantes, avec ou sans alcool, qui rivalise avec d&rsquo;autres boissons en offrant des saveurs comme le Pina Colada Spritz, avec une liste d&rsquo;ingr\u00e9dients amusante (\u00ab Rhums vieillis de premi\u00e8re qualit\u00e9, jus d&rsquo;ananas clarifi\u00e9, noix de coco grill\u00e9e et r\u00eaves d&rsquo;un yacht naviguant sous un ciel bleu \u00bb!). Les produits du fabricant fran\u00e7ais de fromage \u00e0 base de plantes Les Nouveaux Affineurs peuvent rev\u00eatir les apparences du fromage fran\u00e7ais traditionnel, mais le producteur utilise son propre langage et propose une option de rechange au brie vraiment remarquable. Parlons \u00e9galement de Blue Butcher, qui tire parti d&rsquo;un nom de marque et d&rsquo;un syst\u00e8me de conception uniques pour entrer dans l&rsquo;espace v\u00e9g\u00e9tal et occuper la cat\u00e9gorie des fruits de mer qu&rsquo;il tente de reproduire.
